Spinach Pongal

 

Ingredients

  • Whole-grain millet or semi-polished rice – 1 cup
  • Yellow moong dal – ½ cup
  • Seasonal greens (avoid spinach) – 3 handfuls
  • Coconut oil or ghee – generous amount
  • Cumin seeds – 2 tbsp
  • Black pepper – 2 tbsp
  • Fresh ginger (crushed) – 2–3 inches

Method

  • Soak millet or rice for an hour before cooking.
  • In a thick-bottomed vessel, roast the dal in ghee or coconut oil until aromatic.
  • Add chopped greens and cook until reduced.
  • Add water (5x the dal quantity) and cook until the dal softens.
  • Add more water and bring to a boil before adding soaked rice.
  • Cook until the mixture turns soft and creamy.
  • Prepare a tempering with cumin, pepper, and ginger, and mix it into the pongal.
  •  Finish with a drizzle of raw oil or ghee and serve hot with pickle.

Chef’s Notes

* Use traditional grains like Rajamudi, Seeragasamba, or little millet.
* Greens like methi, amaranth, or moringa work best.
* Pairing with pickle enhances the sensory experience.
